A Scoff an' Scuff's Labrador
Triffle Recipe

We may not be excited about peas pudding, but all of us try to save room for our dessert - triffle.

The day before Christmas, cut a small sponge cake, pound cake, jelly roll or cake donuts into small squares and place in the bottom of a clear glass bowl. Choose a fruit (we like mandarin oranges, but strawberry or raspberry is more traditional). Spoon fruit over the cake reserving a few for garnish. Prepare gelatin (same flavor as the fruit you chose) per instructions. Pour over cake and fruit mixture. Refrigerate until set. Prepare vanilla custard. Place over jell mixture and refrigerate. Prepare whipped cream (fresh whipping cream, Dream Whip or Cool Whip). Spread over custard. Garnish with the fruit you saved.

 

Christmas Triffle Raspberry Triffle. The top is decorated with raspberries instead of whipped cream. The bottom layer is raspberry gelatin, raspberries and slices of raspberry jelly roll.
