These beautiful Buffalo once roamed the prairie unhindered by fences. Historically in the Great Plains, buffalo were used for food, clothing and shelter by Native Americans. When white settlers arrived in Kansas they also used the buffalo for survival on the inhospitable plains. Even the buffalo chips were gathered and burned as fuel for cooking and warmth; as you can see by this photo, there are lots of these available. The chore of collecting these dry patties often fell to the youngest child in the family.

Although the handling and raising of buffalo is similar to other livestock operations, the initial investment may be higher because this animal requires a more substantial fence. That cost is offset because they have a lower metabolic rate and will need less feed or hay during the winter. As consumers become more health conscious, many find buffalo an excellent food source. Bison meat is more protein rich then beef, is lower in calories, fat and cholesterol then beef, pork or even chicken. It can be prepared like beef, but the cooking time is less. The NBA is trying to pass legislation to keep buffalo meet free of the drugs, chemicals or hormones that plague the production of beef. The meat from these animals tastes so delicious that Gary thinks the long drive to Kansas is worth it - just to munch a buffalo burger.
